      About Sumatra Mandheling Gayo Highlands Organic

      Arrival in November 2025. Sumatra Mandheling is known for its very heavy, almost syrupy body and its low acidity. This combination makes for a smooth, velvety, yet pronounced cup of coffee. Powerful aroma. Direct and sturdy with nutty flavor.This lot is from the Baitul Qiradh Baburayyan Producers Cooperative and is certified Organic by the USDA.

      Baitul Qiradh Baburrayyan Producer CooperativeFounded in 2002 with 600 farmers, the Baitul Qiradh Baburrayyan Producer Cooperative was created to empower local coffee growers in the Gayo Highlands. Today, the cooperative has grown to include 6,000 farmers, making it a key player in the industry known for producing premium Arabica coffee. They are certified organic by Control Union for Organic farming, The coop is dedicated to sustainable agriculture, ethical trade, and improving the livelihoods of member farmers and their communities.

      Starting from the selection of ripe red cherries, the outer skin is removed using a de-pulper. Once pulp is removed, the coffee beans remain in the husks or parchment. Parchment is washed or soaked, a method unique to the area. The coffee is dried in the sun until the moisture content is about 20%. Next, a hulling machine removes parchment, revealing green coffee beans. Lastly, beans are dried in the sun again until the moisture content is 13%.

      Most farms in this area range from one to four acres in size and are inter-planted with fruits and vegetables, allowing farmers to be more self sufficient in times of volatility. Before making this selection we cupped more than forty Sumatra Mandhelings from a large number of importers.

They provide education to members on best practices for maintaining soil health, conserving water, and reducing the use of harmful chemicals. Sustainable farming techniques include:

      • Organic Farming: Promotes the use of organic fertilizers and natural pest control methods, minimizing the impact on the environment and ensuring that coffee is grown in harmony with nature.
      • Soil Conservation: Implement practices such as cover cropping and agroforestry to prevent soil erosion, improve soil fertility, and enhance biodiversity.
      • Water Management: Efficient irrigation techniques and rainwater harvesting help conserve water resources and reduce an ecological footprint.

      Cup Characteristics: Aromas: tobacco, smoky, roasted hazelnut.  Clean flavors include raisin, persimmon with svory, smoky notes. Earthy, nutty and smooth. A sturdy and pronounced but not overbearing body. The coffee's mouthfeel is viscous and tongue coating.

      Roasting Notes: C+ to FC are good levels for Sumatra, though it is also highly prized when roasting darker. You will find different taste characteristics at each point: At C+ sweeter, nuttier flavors, less mouthfeel; at FC mouthfeel intensifies and reveals the earthy character; as the coffee roasts longer and caramelizes the body remains with added bittersweet characteristics.
