About Ethiopia Guji Bishan Naga Grade 1

First new crop washed coffee from Ethiopia this season, arrived the first of Novemeber in Grainpro.  The two best known regions are contiguous to one another:  Guji and Yirgacheffe. Most of the top washed coffee from Ethiopia that we acquire each year comes from one of these places. This is the top quality from the region, Grade 1.

Like several of our recent top Ethiopia washed coffees were exported by Testi. Testi owner Faysel Abdosh is a strong believer in working with farming communities and growing together. Testi Coffee has also invested in building a school for the community's children in the area. "We have a good relationship with our farmers", says Faysel, as he explains how he wants the farmers to see the washing stations as their own. In addition, the washing station shares profits with the farming community, providing an incentive to ever improve the quality of the coffee they bring. Also, since each community's lots are processed separately, profits find their way back to each community.

Coffee cherries from from a group of 850 small farmers from the town of Shakisso.Coffee. Cherry is handpicked and they are a mixture of heirloom varieties. After a painstaking process to clean and sort the coffee, and after washing and fermentation, the coffee is spread out on drying tables for sun drying.

Coffee from Guji is known for its citrus character with certain exotic spice notes. There are also some hints of bergamot so you will experience some complexity in the cup, particularly when the coffee is freshly arrived.

Cup Characteristics: Very fragrant with Creme Brulee and egg custard scents. Flavors are clean and buttery; vanilla and lemon chiffon pie come to mind.  A touch of spice and a little stone fruit completes the mix. A sweet and layered cup.

Roasting Notes: City+ to Full City is a nice level for this coffee, taking it up to but not pushing fully into second crack. At City+ the floral characteristics are better preserved while the body will be a bit reduced. This coffee is interesting over a range of roasts and profiles.
