Finca La Montana is located in the Chalatenango department (district) in northwest El Salvador. The coffee growing region is in the Alotepec-Metapan mountain range. The farm, nearly fourteen acres in size, is over 4500 feet above sea level. The coffees cultivated are of the Bourbon, Pacas, and Pacamara varietals, grown in fertile clay loam soil under a canopy of shade trees. The farm has nearly 3900 coffee trees and produces only 150 bags of green coffee per year. Raul Ochoa, who inherited the uncultivated land on which the farm is situated from his father many years ago, owns Finca La Montana. Raul began growing coffee of Bourbon and Paca seed on the land in 1986. In 1999, he started a nursery of Pacamara seed. Pacamara is a hybrid - a cross between Red Maragogype and Pacas and is noted for its large bold size and distinctive flavor. This varietal has been cultivated ever since. Today the farm is made up of about 30% Pacamara, 28% Bourbon with the remaining acreage being Pacas. This 2007 #1 Cup of Excellence winning lot is make up of 100% Pacamara. The lot was hand picked over a period of five days. It was processed at Raul’s neighbor, Rene Aguilar, who owns a benefico next to La Montana. The coffee was naturally fermented for twelve hours and sun dried. La Montana is the first farm from the Alotepec-Metapan to win the COE; it was also the first Pacamara. Cupping Characteristics: La Montana is an extremely crisp, bright and sweet cup, floral with hints of jasmine and berries. Lively and piquant, the coffee has a winy, lingering finish. Several members of the international panel of cuppers to be “celestial.” A truly exceptional coffee!
