Guatemala Huehuetenango Fair Trade and Organic

Arrived July 2009. Fair Trade and organic. Washed coffee from highly mountainous Huehuetenango region of western Guatemala. Chocolate, bright acidity, fruity, caramel.

Coffee is collected and processed by the CODECH cooperative (Coordinadora de Organizaciones de Desarrollo de Concepción Huista) which is composed of four coffee producing organizations: Bitenam, Coop. Axolá, Asoc., ADIPY, and ADINTHEC, and is also involved with a Teachers and Womens Counsel. CODECH is an umbrella organization of 11 groups. Four of these 11 groups grow coffee, with the aim of increasing incomes for low-income coffee growers in this remote part of the country. The group members are all either Mam or Popti’ indigenous Mayans. Much of CODECH's coffee is either certified organic or is in transition to organic status, and there are 109 members producing coffee of this description. In a region with very limited trading opportunities, CODECH provides a vital role in helping to provide better income for its members.

Cup Characteristics: Fruity with tart, interesting notes. Black raspberry flavors. Though washed, there are some bold fruit overtones associated with natural processing. Sweet berry fragrance.

Roasting notes: Hard enough bean to handle any roast level but we prefer roasts up to but not exceeding Full City (FC) when full flavor profile is desired.

Comments

This relatively small country produces some of the world's top coffees and offers a variety of coffee experiences. Each region has distinct taste profiles, each of which is enhanced, as always, by the care and attention brought by the farm in growing methodology.

There are more than 60,000 small coffee farms in Guatemala with over 30% of the population engaged in the coffee industry.
