El Salvador Apaneca Illamatepec

Arrived July, 2009, new crop. Certified Kosher. Coffee is from the Apaneca - Ilamatepec mountain range near the Santa Ana Volcano.

The Cuzcachapa Cooperative was founded in 1966 by a small group of coffee growers in Chalchuapa Santa Ana. Today, it is the largest cooperative in El Salvador, processing and exporting coffees on behalf of 1400 members. It is notably the official processing mill for the El Salvador Cup of Excellence and because of their quality approach they were recently named Best Coffee Company in El Salvador. The coop focuses on sustainability and advises their members on obtaining long term environmental and economic stability. One unusual program offered brings portable mills right to the farm so beans can be separated from pulp on site, prior to transporting them to the coop. Since coffee has to be separated very soon after harvesting to avoid haphazard fermentation, the portable separator also allows members to recycle the pulp into high quality fertilizers on their farms. The coop also provides free medicine and medical services to farm employees, help to seniors through donations to area homes for the elderly, and, assistance to low-income public school students by providing nutritional breakfasts as an adjunct to government programs.

The Cuzcachapa Cooperative provides a special track for specialty coffees such as this; cherries must arrive fully ripe and uniform in size with no leaves, sticks or other impurities. Pickers are paid premium pay for this task. The coop than maintains separate wetmill processes, drying patios and warehouses for these coffees. The high degree of special handling is evident in the cup.

Cup Characteristics: Sweet peaches, stone fruits. Balanced, piquant and juicy. Cranberry, mandarin orange, chocolate, sweet, high acidity, good structure.

Roasting Notes: This coffee exhibits chocolate mouthfeel as it approaches full city. Suggest pulling the roast at the very start of 2nd crack.
