Brazil Yellow Bourbon Mountain Water Decaf

This is the decaffeinated version our Fazenda Cachoeira Yellow Bourbon Natural and has had its caffeine removed using the Mountain Water Process.

The Mountain Water Decaf process uses clear, pure water from the glaciers and highest mountain in Mexico. In the decaffeination process, the green coffee beans are immersed in water in order to extract the caffeine. The water constains the soluble components of the coffee beans which hold the elements of the individual coffee's flavor, so that during the extraction of the caffeine the beans maintain their original taste components. The resulting coffee is 99.9 caffeine free. Once decaffeination is finished the beans are dried and packed. We are finding the coffee decaffeinated in this ultra modern Mexican plant to be the purest and cleanest we have found. In addition, the process can be performed on relatively small lots of coffee - this means top quality coffees, rather than volume coffees - can be decaffeinated. Top coffees decaffeinated this way are a real break-through.

This Yellow Bourbon is produced by Fazenda Cachoeira located in the Mogiana Region in the State of Sul de Minas. The cherry of Yellow Bourbons are bright yellow when fully ripe; the cup is very bright and sweet with nutty flavors. Growing altitude is 3500 to 3800 feet. Fazenda Cachoeira da Grama has been in the Carvalho Dias family since 1890. On this farm everything is done manually, which includes coffee plantation handling and harvest, since its topography does not allow any kind of mechanization.

Social and environmental sustainability is considered very important in the farm management. Lindolpho de Carvalho Dias developed a program of planting native species to keep a better ecological balance. The farm has a school, a club and an official size soccer field for the employees' benefit. There are 47 houses for the employees and their families, all with modern facilities. The wastewater is treated to avoid polluting the stream that runs across the farm.

The farm produces various Bourbon coffees, famous for their exceptional quality. This Yellow Bourbon is a full natural process coffee so it will add body and some of the characteristic bite to your espresso blends; however, this can also be a stand-alone coffee.

Cup Characteristics: You will be pleased by how much flavor has been retained by this decaffeination process. As we said of the non-decaf version: Earthy, robust, medium heavy body with milk chocolate aftertaste. Tart with lemon-citrus note, floral notes of jasmine. Sweet with delicate acidity. Also, piquant, sweet and clean.
