New crop Aricha has just arrived and this year Selection 26 was our favorite. The coffee is produced in a collaboration between Ninety Plus Coffee company and the Bagersh family, third generation Ethiopian coffee growers and innovators. This micro-lot of Aricha was grown in the Yrgacheffe region at over 6000 feet above sea level. It is comprised of over 25 local varietals; there are more than 10,000 distinct varietals of coffee growing wild in Ethiopia. It was harvested in the spring and was processed by the proprietary Bagersh sun-dried techniques, including processes related to sugar analysis, intensive ripe cherry control, controlled s-curved drying and bed separation. The coffee is natural (unwashed) and is certified organic.
Note about Aricha social initiatives: Prices paid for cherry are at the extreme high end of the market, and the best premiums are paid for the most well-selected cherry. Social programs are in the works and include assistance with increasing production, coffee job creation, schools, clean water and medical care. All Aricha and Beloya coffee is produced organically. Natural processed coffees are processed with little or no water, eliminating pollution of surrounding waterways. Ninety-Plus aims to implement programs to support local biodiversity and shade tree maintenance. Aricha and Beloya coffees offer a most unusual and delicious cup. In fact, unlike other coffees we know, the cup actually metamorphoses over a period of time. Taste it the day after roasting and the same roast a few days later and you will see what we mean. Cup Characteristics: At once, both refined and wild, Aricha Selection Twenty-Six is lush with fruit-berries, melon and peaches. It possesses lemon acidity and creamy, chocolate mouthfeel. Very floral, Aricha is a big, intense and complex coffee with an ever-changing taste profile. Roasting advice:Keep the roast on the light side, like a City but not Full City Roast to maximize the fruit and subtler elements of the coffee, which will be diminished by darker roasting.
